“love these muffins, I have one for breakfast with a protein shake before a workout!”
1 cup fat free cottage cheese
4 egg whites
2 cups oatmeal
1 ½ cups oat flour (use ground up oatmeal)
1 tsp baking powder
½ tsp baking soda
Cinnamon to taste
Vanilla extract to taste
Preheat oven to 400. In a large bowl, mix bananas, cottage cheese, egg whites, baking powder, baking soda, cinnamon and vanilla. In separate bowl, mix oatmeal and oat flour. Add to other banana and cottage cheese mixture. Stir all ingredients until blended. The consistency of the batter should be gooey. Spoon mixture into muffin tin. Place in oven and cook for 15 minutes or until done.
Makes 12 muffins
Per muffin: 146 calories, 8g protein, 2g fat, 24g carbs.
