Day 12- Veggie Burgers

This recipe is from the Taste Of Home Guilt Free Cooking book.
It has minimal ingredients and super easy to make. You can experiment with different veggies or use ones you love the most.

Makes 6 burgers
57 cal (without bun)

1 small zucchini, grated
1 medium uncooked potato, peeled and grated
1 medium carrot, grated
1\4 cup grated onion
3/4 cup egg substitute (I use real eggs)
Pepper and salt to taste
6 buns, preferably 100% whole wheat

Toppings such as onions, lettuce, mustard, ketchup etc

In a bowl combine the first 6 ingredients. In 6 patty shapes,Pour the batter in a griddle lightly greased. Fry for 2-3 minutes on each side, or until golden. Serve on a bun with toppings as desired.
