Day 25- 2 Ingredient Pancake

This recipe I saw reading the Carrots and Cake blog.

I thought it looked interesting and a very quick alternative for breakfast. I was definitely skeptical as I was making it this morning.

All you need is:
New Image
1 banana
1 Large egg

2 ingredient pancake
Mash up the banana, I used a fork.
Then add the egg and mix well.

Add to a pan. I used a tad of butter here. Make sure Its cooked so its bubbling in the center. Next time I would use a non stick pan instead of this cast iron. Its easier to flip.

Mine clearly broke and I failed at flipping it. I was too impatient to let it cook enough.

It looks like it would suck but I actually really enjoyed this recipe. The texture is different to regular pancakes (obviously) but it reminded me of unseasoned banana bread! Next time I will try adding  some spices and maybe a few walnuts.

Day 20- Muesli

This is the perfect start to you day. Its delicious and healthy!

I got this recipe from the “Living the g.i. diet” by Rick Gallop
This recipe is good for multiple servings. I like to combine 1/3 cup of the muesli with 1/3 cup of water the night before and let it sit overnight. In the morning I nuke it and add milk. You can also boil 2/3 cup of water with 1/3 cup of muesli  the morning of which ever you prefer. Keep in an air tight container for up to 1 month. Continue reading

Day 10- Homemade Crackers

I’m so in love with this recipe.
Living this year plastic free Im unable to purchase crackers because of the plastic bag. I came across this recipe from Epicurious for crisp rosemary flatbread.

I took this recipe and made it my own.
Instead of making flat bread, I rolled it out and cut it like crackers.
I also experimented with different spice and herb combo’s
One of my favorite herbs is dill. So I used dill in place of rosemary and used 1/4 cup pickle juice and 1/4 cup water and used less salt. OMG so good!
I also tried using sweeter spices such as cinnamon and nutmeg. It was just okay.
I would definitely stick with the savory spices/herbs.
you can also split 1/2 white and 1/2 whole wheat flour.

Day 1- Homemade tomato sauce

I made this post into a video. Its a very simple recipe and is a base for recipes coming up throughout the 30 day challenge. I froze this batch in a few 1cup, 4cups, and ice cube trays. This allows me to use what I need and know exactly how much Im using with out thawing out the whole batch.
