So this week will be frugal with lots of leftovers and repeating meals. Since we are moving we have been really short on funds. Paying for the van, damage deposit etc can add up quickly especially paying for everything up front.

Life is so hectic this coming week.
I’m back to teaching dance and doing hair at the salon after the holiday.
We also just got approved for a new apartment! YAY I’m so excited to finally move! We have lots of meetings to get everything sorted for the move so I’m spending quite a lot of time on transit this week.

So This week is off to a late start.
Today, Tuesday Jan 1 2013 is the beginning of our month gluten free. Due to my lack of organization I cant start till Thursday. Today I’m meal planning and researching. Tomorrow is grocery day and baking day.
I thought it looked interesting and a very quick alternative for breakfast. I was definitely skeptical as I was making it this morning.
All you need is:
1 Large egg
Mash up the banana, I used a fork.
Then add the egg and mix well.
Add to a pan. I used a tad of butter here. Make sure Its cooked so its bubbling in the center. Next time I would use a non stick pan instead of this cast iron. Its easier to flip.
Mine clearly broke and I failed at flipping it. I was too impatient to let it cook enough.
It looks like it would suck but I actually really enjoyed this recipe. The texture is different to regular pancakes (obviously) but it reminded me of unseasoned banana bread! Next time I will try adding some spices and maybe a few walnuts.
